What is Pu’er Tea?

Pu’er (普洱茶) is one of the most distinctive teas in the world. Originating from Yunnan Province in southwest China, Pu’er is known for its deep earthy aroma, complex flavour, and unique ageing process. Unlike most teas, Pu’er can continue to develop character over time, similar to wine.

Today, Pu’er tea is widely enjoyed both as a traditional drink and increasingly as an ingredient in desserts and specialty products.

 

The Two Main Types of Pu’er Tea

Pu’er tea generally comes in two forms:

Raw Pu’er 生茶 (Sheng Cha):

Slowly aged over many years, fresh and sometimes astringent when young

Ripe Pu’er 熟茶 (Shu Cha):

Fermented through an accelerated ageing process, smooth and earthy

 


What Is Ripe Pu’er (Shu Pu’er)?

Ripe Pu’er was developed in the 1970s to replicate the flavour of long-aged raw Pu’er in a shorter time.

Through a process of fermentation, tea leaves are carefully fermented in controlled humidity and temperature conditions. This process transforms the flavour profile of the tea.

Typical characteristics of ripe Pu’er include:

smooth and mellow body

earthy and woody aroma

hints of dried fruit or cocoa

low bitterness compared to many green teas

 



Why Ripe Pu’er Works Well in Desserts

Ripe Pu’er has qualities that make it particularly suitable for dessert applications:

deep roasted and cocoa-like notes

balanced bitterness

strong aroma that survives dairy and sugar


These qualities allow it to pair naturally with ingredients such as:
